I personally started with the book Rincewind the Wizzard and loved it, but I’ve seen others suggest not starting with the first book in that. I loved it though. I also love his witch discworld books, with those you’d start with Equal Rites
THe first one, Colour of Magic, is very amusing, but you don’t have to read them in order. THe ones about the witches are fun, I particularly like Witches Abroad.
I’d suggest the Mort series. Mort, The Reaper Man, Soul Music, Hogfather and the Thief of Time. It starts simple and gets more and more complex, so it allows you to get used to his style, jokes, subtleties, characters, etc. Also, I highly recommend you read Good Omens by Neil Gaiman and Terry Pratchett. You will probably love it! 🙂
