The Deltora Quest series is one of the first fantasy series I read, but I think it might be for kids a tad older, maybe 7 at youngest. Are you reading it to them, or are they reading it themselves?
The ice dragon by George RR Martin. Tell me a dragon by Jackie Morris Dragons at crumbling castle by Terry Pratchett. My daughter has loved all of these and when she was 4/5 tell me a dragon was a firm favourite.

Not a problem! Another series that might be okay is The Spiderwick Chronicles. No dragons, but lots of fantasy creatures and adventure.

Tamora Pierce has some chapter books with dragons/magical themes. I loved them as a kid.

The Fire within is the first story in a series about clay dragons. But you soon realize these “clay” dragons are alive. It’s a cute series!
