Mercedes Lackey has a series of fairy tell retellings, The Elemental Masters one I just finished was a Cinderrella retelling taken place during WWI the Cinderrella character is a Fire Master, and her ‘Prince’ acutally a Lord’s son, was a master of Air. The book is called Phoenix and Ashes. Lackey is really good at re vamping the fairy tales.

There is a steampunk Red riding hood series by Melanie Karsak plus Steampunk Fairy tales. “Wolves and Daggers” is book number 1. I think you will enjoy them.
There are some really funny picture books that adults can enjoy, like “the Stinky cheese man”, “the TRUE story of the 3 little pigs”, “the cowboy and the black-eyed pea”.
That reminded me there is an author named Liz Braswell who writes stories about what would have happened in an alternate ending,like what would happen if Sleeping Beauty had not woken up with the Prince’s kiss,or what if Ursula hadn’t been defeated.
I don’t remember the author’s name, but “Wicked” is the true story of the Wicked Witch from Oz; and Confessions of an Ugly Stepsister, by the same author, is a retelling of Cinderella. Another one I really enjoyed was Enchantment, by Orson Scott Card, a retelling of Sleeping Beauty that incorporates Russian fairy tales!
There is a great YA book called a Curse As Dark As Gold, it’s the Rumplestiltskin story.
