I think his memoir A Moveable Feast is a great place to start. It sort of adds perspective and enables you to adapt to his writing without going off the deep end since the context is more easily followed.
The first book Ernest published was called “In Our Time.” It contains short stories and vignettes. He was a journalist and the compact style of journalism influenced his style and is readily evident in the vignettes. All the other recommendations are good also.
It depends what kind of story you are looking for. The Old Man and the Sea, being his most renowned work certainly isn’t the most exciting of his writing. The Sun Also Rises, For Whom the Bell Tolls, or A Farewell to Arms are fantastic. Also, there are many gems in his collected short stories.
