Three men in a boat (To say nothing of the dog) by Jerome K. Jerome. It’s not just the funniest book ever. But it has countless quotes that can be easily apply to any situation.
There are several, but The English Patient is beautiful writing and story telling.

Gone with the wind, The Secret Garden, The Outsiders are the first that come to mind.
