Epic Trilogies are quite rare, far and away the best Epic series is Donaldson’s ‘Chronicles of Thomas Covenant’but that’s two trilogies and a quadroligy.
Even Le Guin’s ‘Earthsea’ cycle contains five books, and that’s the smallest thing I’ve read that one can define as an Epic.

Any of Robin Hobb’s trilogies are outstanding but he best way to read them is to start at the beginning (The Farseer Trilogy) and work in order above as they all tie up in the last series.

Also the Broken Earth trilogy by NK Jemisin is fantastic, well worth reading.
