Serial killers you can’t beat Chris Carter for being graphic, although Stuart Macbride and Mo Hayder are pretty graphic too. The only stalker one I can think of would be The Book of You

Maybe you could try some true crime as well as fiction

Nameless by Joe Conlan ?

Stalkers: You by Caroline Kepness & The Story of You by Claire Kendall…I couldn’t finish the later as the stalker was sooooooo infuriating & the atmosphere of the book was so claustrophobic so she did a good job with the writing

Do either of these have any animal harm/death in them? I’m overly sensitive to animals being hurt/killed.

I don’t think so but honestly can’t say for sure. I think the main character in You is just cruel to humans.

(I read them awhile ago & my memory not great!)

Would agree with Tilly Chris Carter and Mo Hayder .Haven’t tried Stuart Macbride yet but it’s on my list.

The silence of the lambs – serial killer

How about the series of books about Dexter the forensic blood spatter analyst for the Miami Dade police who in his spare time is a serial killer who stalks and murders other killers? It was made into a tv series which I loved. Unfortunately I haven’t read the books so don’t know who wrote them but I’m sure Google can tell you!
