The Bear and the Nightingale would be a good one. And All My Friends are Superheroes would be a fun, easy read but with tons to discuss. Also, 100 Years of Solitude would be fun. (I like Magic Realism, can you tell?)
It depends what your focus is. I belonged to a Spirituality Book group and we read The Alchemist and Zen and the Art of Motorcycle Maintenance among others which made for some interesting discussions. The classics are great too for book clubs in my opinion
Depends on the genre everyone will like
I am pretty sure Night Circus was the first book my club read that we all liked.
All genres
The Glass Castle by Jeanette Walls
Homegoing by Yaa Gyasi, it’s awesome and full of things to think about.
Defending jacob

Look for books which you can have a proper discussion about.
Me Before You by @Jojo has provoked more and better discussion than anything else our book club has read.
That movie was disappointing, but I cried
We Need to Talk About Kevin would be a good discussion
