Almost anything by Naguib Mahfouz. Especially “The Harafish” and “Children of the Alley”
“Chicago” by Alaa al-Aswany is half in Egypt and half in Chicago, I read that in one sitting.

The Chalcedony chronicles by Kristen McMichaels. It’s YA but some of the romance is a bit more adult. It’s a time travel romance story where the love interest is from/set in ancient Egypt. Although I think the first book is completely in current day US. The second book going forward has more Egypt in it

Have you tried The Kane Chronicles by Rick Riordan? They don’t start out in Egypt, but they do get there. There is also quite a bit of Egyptian Mythology in there. I enjoyed it.

If you like mysteries, the Amelia Peabody mysteries by Elizabeth Peters are favorites. The first one is The Crocodile on the Sandbank.
