Lee Smith. Start with Fair and Tender Ladies. Sharyn McCrumb’s ballad series.

Ann Hite is one, and Sandra Dallas writes very similar stories in the same vein for Colorado Rockies (and most of those folks in that time period were from the southeast.)
Oh, and the Vicki Lane mysteries set in NC, a little mystery, a little history, and a whole lot of Appalachia. I loved them. Ferrol Sams is another.
