I love the Valdemar series by Mercedes Lackey. But there are a LOT of them! Also, her Joust series (only 4 of those) and her Elemental Master series. Those are based on traditional fairy tales.

If you want easy-to-read, I can definitely recommend The Earthsea Quartet by Ursula Le Guin. It has all the potential of an epic work, but is kept pretty straight-forward and simple. Actually one of the reasons I found it a little disappointing. But worth a read if you want just something fun.
