Misty of Chincoteague for sure. We stayed at a B&B on Chincoteague Island a few years back. Turned out to be the house in which Marguerite Henry lived when she wrote the book. I could just picture it.
There are some AMAZING Australian brumby (like mustangs) stories by Elyne Mitchell (the Silver Brumby series) and Mary Elwyn Pratchett that are classics of Australian children’s fiction if you want something well written

Traveller by Richard Adams (of Watership Down fame) is excellent. Told entirely from the perspective of a horse that exists around humans.
I know they’re a little old-fashioned but I loved Trixie Belden when I was around that age. And there’s a lot about horses in there.
