James Clavell’s Shogun series. There are 4 or 5 but if I remember correctly each are self contained stories with a light connection to the others. I remember enjoying these immensely!
The Girl Who Wrote In Silk is set in the US but is historical fiction with an Asian family story line. Also, Hotel at the Corner of Bitter and Sweet for the Japanese American experience of being removed from homes and put in camps in the US. Both are great reads.
Jade Dragon Mountain by Elsa Hart. White Mirror by Elsa Hart. These books are set in late 17h century & early 18th century China. Any of the Sano Ichiro books by Laura Joh Rowland. These are set in 17th century Japan,

The Ash Garden by Dennis Bock. It’s a bit of a slow read sometimes, but the story is beautiful.
