“Memento Mori” by Jonathan Nolan is written, in part, in second person.

There’s also a collection of short stories called “Cowboys are my Weakness” by Pam Houston and there’s at least one story told in second story, to my memory.

The beginning (and I believe it continues off an on later in the book) of Confessions by Kanae Minato is in second person! I enjoyed it and liked the second person part as it’s so uncommon.
