Piers Anthony is good… People always say “Xanth” but I think I like the Adepts better. Do you mind “younger” books? Susan Cooper has a series that’s not too bad… And there’s stuff like The Book of Three (Lloyd Alexander) or Narnia (C.S. Lewis) which, to me, are pretty much ageless 😉
Oh my god… And I don’t know how I forgot about Anne McCaffrey. Her Pern works are going to be what you’ll see the most about, but she has probably close to 100 published works that are steeped in fantasy/sci-fi
Currently re-reading the Robin Hobbs Tawny Man trilogy. Her “The Farseer Trilogy,” “Liveship Traders Trilogy,” “Rain Wilds Chronicles,” and “Fitz and the Fool trilogy” are all set in the same world. Start with book one of the Farseer Trilogy, “Assassin’s Apprentice.” Amazon currently has the kindle edition for $2.99 so checking out the author won’t cost a fortune.
The Sword of Shannara by Terry Brooks. He wrote three Sword books, but many others that relate to the same world, some set in different time periods. He also wrote a fun one called “Magic Kingdom for Sale–Sold!” And it has sequels as well.
Scepter’d Isle Series by Mercedes Lackey and Roberta Gellis is excellent. It uses historical settings (Tudor England) and adds elves.

Sandman Slim series by Richard Kadrey. FYI, this series is not for everyone. They contain violence, profanity and are blasphemous.

I enjoyed Graveminder by Melissa Marr, but can’t get into her other series.

Tolkein, Brooks, Goodkind, Paolini, GRR Martin and Mercedes Lackey and her Valdemar novels, love those, the gryphons are my favorites when they get to be featured.

And if you’re not opposed to young adult fantasy, Rick Riordin is highly recommended.
Will warn you… Piers Anthony can push some uncomfortable limits. But Xanth is pretty tame…
Brian Jacques “Redwall” series is amazing too… If you like stuff like Watership Down or N.I.M.H.
Brendon Mull did Fablehaven it was spectacular twist on all the tropes.
David Eddings is great and so is Isaac Asimov. Be careful with IA as he did a ton of sci-fi and you’re looking for his fantasy stuff.
Brandon sanderson! Mistborn is good but stormlight archives is even better
David Eddings is a great one. Start with the Belgariad series then the Mallorean.
The Dune books are good too… if you don’t mind a little sci-fi thrown in…
